Juan-les-Pins concentrates its year into a few months, and July sets the tone. The villas under the pines entertain, the hours shift, and a dinner starting at ten in the evening is unremarkable.
For a chef that calls for a flexibility not everyone has. Service stretches, numbers at table move through the day, and the kitchen has to deliver late without the quality collapsing. We rule out people used to fixed hours from the start.
During the jazz festival the area is saturated: lodging, traffic, parking. Work in that period is arranged well in advance.
The rest of the year Juan returns to an ordinary rhythm, and requests resemble those of Antibes: family stays, staff searches for houses used on and off.
