The only real city on the Riviera. It shows in lead times, in prices, and in what can still be arranged at short notice.
Nice changes a great deal simply by being large. Sourcing works all year, the Cours Saleya trades out of season, and the airport puts arrivals twenty minutes from most residential quarters. For private work that is three constraints removed.
Quarters that want different things
Mont Boron and Cimiez hold the houses with gardens, usually lived in year round by settled families. People recruit here more than they book: a regular chef, a housekeeper, sometimes a driver.
The apartments of the carré d’or and the seafront follow another logic. Smaller kitchens, no storage, table service in tight rooms. A chef who has only ever worked in villas can be caught out on the first evening.
It is also the commune with the widest availability in the department. A request at a few days’ notice succeeds here more often than at Saint-Jean-Cap-Ferrat or Ramatuelle.
